Vegan bounty – coconut bars covered with chocolate (recipe)
freshly grated or dried
Coconut blossom sugar
or unrefined cane sugar
Heat the coconut milk, sugar and vanilla extract on a low heat and stir until the sugars are completely absorbed.
Add the grated coconut or dried coconut and stir well together.
Raise the heat and add the agar agar. Leave to cook for 1 minute with constant stirring.
Remove the pan from the heat and allow to cool to room temperature.
Put the cooled mixture in the two lightly greased containers and allow to cool in the refrigerator until it has solidified sufficiently (after 30 minutes)
Melt the chocolate au bain marie (or in the microwave on defrost mode) until it is very liquid.
Remove the filling from the containers and cut it into equal bars.
Dip each bar in the melted chocolate or flood the bars (slowly but with a smooth movement) generously with the chocolate
Place your future sweet snack in the fridge again and try to wait until all the chocolate is hard.
