Aquafaba (a.k.a. the moisture from a can of chickpeas or beans) is totally crazy! You just have to beat it up, and you get a foamy mass with which you can make a lot of tasty things. Like vegan desserts, for example 🙂 More about aquafaba in this article.
I admit it right away: chickpea fluid does not taste very good in itself. And then I still express myself very softly haha. However, as soon as you add other ingredients to it, you do not taste anything of that original flavor again.
If that ingredient is also pure chocolate, it will only get better 🙂
Take this airy chocolate mousse based on aquafaba for example. It’s ready in no time. You can see it in the video and the recipe below.
- 120 gram chocolate,, I prefere pure chocolate, you also can use other vegan chocolate
- 2 cans aquafaba (moisture from 2 cans of chickpeas (+/- 200 ml))
- 4 tsp cocoa powder, unsweetened
- 1 tsp powdered sugar, (optional and / or to taste) or finely ground xylitol (for a more healthy version)
Melt the chocolate au bain-marie and let cool briefly.
Beat the aquafaba with the electric mixer for 5 minutes. Make sure the mixture is well stiff.
Add the melted chocolate and cocoa powder. Continue to beat until everything is mixed well. Taste and add additional sweetener if desired.
Spoon the mousse into a bowl or spread it over separate bowls. Leave for 2-3 hours in the refrigerator to firming up.
