Mashed sweet potatoes with spinach, red onion and cashew

Ingredients
- 1 kg sweet potatoes
- 4 spring onions
- 2 red onions
- 1 red chillies (in very small pieces)
- 150 gr spinach
- 1 clove garlic
- 100 ml soy cream
- 1 ts agave syrup
- 3 tbsp balsamic vinegar
- 30 gr soja margarine
- 100 gr cashew
- 0.5 ts cumin
- 0.25 tsp cinnamon
- Pepper (to taste)
- Salt (to taste)
Instructions
- Peel the sweet potatoes and cut into pieces of about 3 cm. Cook them for 20 minutes in lightly salted water.
- Mash them with a potato masher, add the soy cream, margarine, chili pepper, and spices. Season off to taste with salt and pepper. Then scoop the (washed) spinach and spring onions under the mash.
- Peel the onion and cut him into thin rings. Finely chop the garlic.
- Heat some oil in a pan and fry the onion and garlic. Add the agave syrup and heat for 1 minute. Pour the balsamic vinegar and simmer until the vinegar evaporates.
- Roast the cashew nuts in a dry pan. Spoon the mashed potatoes in a baking dish (or two little), sprinkle the cashews over and scoop some of the onion mixture over the mashed sweet potatoes.
- Heat in the oven at 180 degrees for about 15 minutes.
