Tapenade is something I like on freshly made focaccia. Together with some vegan cheese, tomato, lettuce, onion and possibly olives, grated carrots, … But you can also spread it on toasts with some finely chopped basil. And for the quick bite a super fast and easy pizza. Take vegan naan bread, spread the tapenade on it. On top of it, you can lay mushrooms, bell peppers, onion rings, … Place it in the oven.
- 50 gram sun-dried tomatoes
- 1 tbsp tomato puree
- 2 tbsp balsamic vinegar
- 0.5 tsp dried thyme or 1 tbsp fresh
- 2 tbsp Parsley, freshly chopped
- 1 clove of garlic
- Few drops lemon juice
- Pepper (to taste)
- Salt (to taste)
Put all ingredients in a cup and mix with the hand blender. Add extra (olive) oil if necessary. Season to taste with pepper and salt.
You can also add black olives, basil, yeast flakes, pine nuts, ....
