I currently have a lot of butternut squash at home; all received from the family. After having eaten butternut squash soup a dozen times, want to make other things with it. A part of it, of course, goes into the freezer for times when I have little time to make my meal. But I also wanted to alternate with it, so I started to think about what I could do with it.
With 1 butternut squash, you can please about four people. Or you have four days of food, also useful. 😉 Cut the butternut squash into pieces and remove the seeds. Then you can further process the pumpkin as you want: dice it, grate it, … or cut it in half and hollow it out. You can check how to cut and peel butternut squash in this article.
Mashed potatoes and butternut squash
A mash of potatoes with vegetables can always be served to me. So also with butternut squash. Cook the potatoes and butternut squash until tender and mash them with a hand potato masher and a little of the cooking liquid or plant-based milk. Season with salt and nutmeg. This is tasty with some extra vegetables and seitan beef or vegan fish fingers.
Butternut squash in soup
You can use just about anything in a soup. Stew an onion, add the pumpkin squash in pieces and let it simmer for a while. Add water, vegetable stock powder, and pepper and let it cook. Once the pumpkin is cooked you can mix the soup. Additional ingredients that you can add are leek, bell pepper, chili pepper, garlic, ginger, coconut milk, and fresh basil. You only add the latter at the end and do not let it cook.
Butternut squash on pizza
Something else on your pizza? Then cut the pumpkin into small cubes, roast them in the oven or cook until done. Top the pizza of your choice and also use the butternut cubes. Bake the pizza.
Butternut squash in the oven
You can bake a butternut squash in the oven as the only ingredient, but I recently combined it with 5 potatoes and 2 carrots. Cut both the potatoes and the butternut squash into small cubes and put them in an oven dish. Cut 3 cloves of garlic into small pieces and 1 onion into rings. Place this over and between the butternut and potato cubes. Add fresh thyme, oregano, salt, and pepper. Pour over a dash of olive oil and toss everything well. Place in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for approx. 20 minutes. If it is not cooked yet, leave it in the oven for a little longer.
I made this with spinach cream sauce (made with soy cream) and ate spiced tofu.
Make a sauce
Cut the butternut squash into cubes and boil it in water with a little vegetable stock powder. Once the butternut cubes are cooked, mix them with a little of the cooking liquid and possibly also a little plant-based cream. Your sauce is ready to serve with pasta, for example. Nice combined with spring onions.
Stuffed butternut squash
Butternut squash is very well suited for stuffing. And it looks nice again.
I made a stew with onion, vegan minced meat, pepper and the flesh of the butternut, with a little chicken seasoning (mostly vegan) over it. Afterward, put the filling back in the pumpkin and in the oven at 180 degrees C (350 degrees F) for around 40 minutes. Check the doneness of the pumpkin regularly, because this may take longer or shorter depending on your oven and the size of the butternut.
Butternut squash in pastry
Just as you can make carrot cake, you can also use grated butternut in cake or muffins. You can also add it to your pancake batter.
