If there is still 1 type of product missing on the “vegan market”, then it is definitely vegan ice cream. Anyway, if you want something different than the usual vanilla soy ice cream from the supermarket. Not that it would be so bad (although it depends on the brand) but still … where are the other flavors are? 🙂



Long story short: if you don’t live in a “vegan world city”, chances are small that you will be buried under a lot of variations of vegan ice cream. However, it isn’t a drama either, guess what … making vegan ice cream yourself is ridiculously simple!

Of course, the desire for nice cool ice cream is greatest in the summer. Especially on the days when the sun is brighter, you can knead the asphalt as modeling clay and you start spontaneously observing oases. In short; outrageously warm 😉

Is an ice cream maker necessary?

I regularly received this question and that is of course not entirely illogical. It is often thought that ice cream makers are incredibly expensive. And that this certainly does not outweigh the number of times you will actually get such a thing out of the closet.

Now I will be the first to admit that having an ice machine is handy. You can also make excellent ice cream without such a device, but to be honest … that is a time-consuming and intensive activity that makes the experience less fun than it should be.

That is why I own a cheap device to make ice cream with.

How to make vegan ice cream?

Important for a good result is to stir in the corn starch and continue to stir gently until the mixture thickens to a light pudding (+/- 10 minutes). Do not boil the mixture again! If you want to do it faster, you can get ice crystals, which is not good for the structure of your ice cream.

The recipe is based on soy milk and soy cream. However, if you do not want or cannot eat soy, no panic. You can just as well replace the soy products with another plant-based alternative.

Please note; the fat content is important to get a good result. Vegetable drinks with a low-fat content will not make your recipe a success. Already 1 very good alternative is pure (read: full-fat) coconut milk and coconut cream. But you can also use almond milk, hazelnut milk, …

Just about that fat content; am I going against all health trends? Pretty. But hey … you do not want failed homemade ice cream and moreover, you realize that you do not have to eat vegan ice cream every day ha!

So enjoy … but in moderation 😉

Below you find my favorite recipe. But I know not everybody likes lavender in food. You can change the lavender with mint or something else. The lavender I use is organic from my own garden.

How to store homemade ice cream?

Store you own ice cream in an airtight container. Place it in the back of your freezer. That place is the coldest and the temperature stays the same. In front of your freezer the temperature changes because you open en close the door.

Instructions
  1. Rinse the lavender thoroughly.
  2. Mix the corn starch in a small bowl with 100 ml soy milk. Boil the rest of the soy milk with the soy cream, sugar, and lavender. Remove from heat and soak for 1 hour.
  3. Sift the mixture to remove the lavender and bring to the boil again. Then turn the heat down.
  4. Stir in the corn starch and continue to stir gently until the mixture thickens to a light pudding (+/- 10 minutes). Do not boil the mixture again!
  5. Remove from heat and let cool to room temperature. Stir occasionally to remove the skin on the pudding.
  6. Put the mixture in a pre-cooled bowl, cover with a plate or foil and let cool in the fridge for 1 night.
  7. Prepare the ice in the ice machine or manually.

Tip: do you want a stronger lavender flavor? Then add some of the leaves or flowers before you start turning the ice.
